Help (with a Mango)

#1 Post by giraffe » Tue Jan 13, 2009 6:26 pm

Does anyone know how you know if you are buying a ripe mango? And when you've bought it is it constructed like a peach? (I assume there is a stone to remove and then you eat the flesh)

I saw two in the supermarket today and they were totally different colours. (Are they like apples, where the colour doesn't affect the ripeness?)

They vary in colour, but usually the redder ones are a bit riper. Make sure you give them a little squeeze. If they're too soft they're disgusting, too hard and they're a bit hard going and not as sweet. They should give slightly. They do have a large stone in the middle, which can be difficult to remove. I suggest scoring round the mango "pole to pole" with a sharp knife, cutting round the stone. Then halve it and dig the stone out. I usually remove the skin because it can be a bit tough to eat.

WARNING if you have a very ripe one, you'll have to eat it in the bath. They can be ridiculously juicy!!

There is a very clever way of dicing mango which is illustrated here:

I've got a video about mangos here:
Like you do...

  I've looked at it to increase my already humungous mango knowledge, but can't hear the sound just yet because I keep getting told off by my daughter who's practising the piano. (Personally I think mango studies are far more important than her stupid degree, but there you go...)

I have also looked at the video. Don't worry bunnylump. You're not missing out too much with the sound. All it does is repeat the word Mango rather a lot.

Chefs on TV make it look very easy to prepare mangoes, using some sort of way slicing off two sides, and scoring them and peeling the skin back.

Let me utter a word of warning - they are lethally slippery, and nowhere near as easy to prepare as people would have one believe. But worth it.

I think I'd better take into account all of these tips, as it's my cookery lessons giraffe is doing the research for!

slice the mango either side of the stone then score diagonally in each direction across the flesh (of the mango, not yours) and turn inside out so it looks like a hedgehog.

so as not to waste the piece still attached to the stone remove the peel and then munch away.

the stone is flattish so that makes slicing either side off it easy.

the peel is not eatable.

My post went missing! I just posted gill a nice long reply about how giraffe wasn't helping, she just happened to be at the computer when I needed assistance. It was so long that I can't be bothered to write it all out again. I'm just going to post 'have you seen my forum post' posters everywhere and hope it turns up!

I have discovered the "missing post syndrome" solution. Sometimes you write a reply and when you press submit someone got there before you. Instead of showing your submitted post it asks if you want to revise your post because of this. If you just press enter again , or return to the board index(as you would normally do) your post vanishes into cyber space. On this occasion, while you were typing, Kathlyn replied before you go to submit. WHOOSH> Off it went into the black hole never to return.

sorry kingsley that you lost your post but obviously none of us know when anyone else is about to post. so it always pays to read the messages that are put up. i use another site that also lets you know when someone has posted before you so you can revise your post, this is especially useful on games threads.

Good advice Kathlyn. What do we tell everyone in an exam situation? read carefully- dont assume. Assumption is why some of my posts have disappeared, why haven't I taken my own advice in the past. Assumption.

I'm researching mangoes as I was stood in asda today looking at two mangoes which were totally different colours, one reckoned it was a classII organic one and the other one wasn't.

I had no idea what to get for Kingsley's experimental fruit dish!

I see my title has been edited. That is much clearer!

Maybe this will help when buying a mango. Press the top like you would when buying a melon. If it "gives", but the sides are firm, buy it whatever the colour.

We have a favourite mango pud that was an idea in a card from Sainsbury's

Chopped up mango, Natural yoghurt on top of it, then a sprinkiling of crushed ginger biscuit. Takes about 10 minutes to prepare. One mango and one biscuit does enough for 2-3 people depending on size of mango.

This has to be in an individual pastry case (ie finger food) and she has done an apple and strawberry one and now it has to have something from another culture.

In my day they taught us techniques, like creaming, folding etc. Now they make the same thing over and over again and change something each time.

No wonder youngsters can't cook. (With apologies to fernando who made a very nice quiche on Saturday, with no help)

They drive me mad, food tech teachers. They are supposed to deliver a section on "healthy eating" and then get the kids to make loads of pastry and pizzas!!
