OK, the potatoes were to die for. Nicest version of "roast" potatoes I've ever had. And they went really well with above dish. :D

Patates sto Fourno

5-6 potatoes, peeled and cut into eveny sized wedges
125ml olive oil
1tsp oregano
1 tsp garlic powder
Two lemons, juiced (plus more for serving)
125 ml good chicken stock
Salt and freshly ground pepper to taste

Preheat oven to gas 6

In a large mixing bowl, add the sliced potatoes and toss them with the remaining ingredients until they are well coated.

Line a large roasting tin with aluminium foil ( I used a teflon sheet). Place the coated potatoes in a single layer and drizzle them with any remaining marinade. At this point the dish will look improbable - there is a lot of liquid in the pan.

Bake in the oven for an hour to and hour and a half. Carefully turn half way through. The liquid will gradually bubble away leaving lovely moist potatoes with crispy edges.

Re-season with salt and pepper and serve with lemon wedges so that a little more of this can be added if desired.
You're only given a little spark of madness. You mustn't lose it.

OK and finally, while I'm on, you might as well have the recipe for the pudding I made too. This was also very yummy and very easy to make. I have found this one to be a real crowd-pleaser.

LIME AND COCONUT TART

350g sweet desert pastry ( I just bought it because I'm lazy)
75g creamed coconut (the block stuff, NOT the canned liquid)
200ml double cream
3 large eggs
1 egg yolk
110g caster sugar
Juice of 3-4 limes (I used 4 because I like it tangy)
50g desiccated coconut
2 tbs icing sugar

Preheat oven to gas 6. Line a 23cm tart tin with the pastry, rolling it out to the thickness of a £1 coin. Line the pastry with either a crumpled sheet of greaseproof paper or a teflon sheet and fill with baking beans. Bake blind for 10-15 minutes or until the pastry is lightly golden. Remove the paper and beans and bake in the pastry for 5-10 minutes more.

Turn the oven down to gas 3. Grate or crumble the coconut into a saucepan then pour in the cream. Gently heat over a low temperature until the coconut has dissolved. Pour into a jug to cool slightly.

Whisk the whole eggs, yolk and sugar together. Stir in the lime juice and creamy coconut mixture. Pour into the pastry case and cook for 30-40 minutes or until the filling is just set. Leave to cool in the tin.

Toss the desiccated coconut in the icing sugar and tip into a dry frying pan. Heat until lightly toasted and caramelised (stir all the time, this happens quite quickly!) then sprinkle over the tart.

What cream? No cream in your ingredients list. I wondered if you meant the creamed coconut since I don't know what that is, but you said it was a block, and you want the cream poured. :?

Is this a puzzle or a recipe?

Aha! That makes more sense. Sounds nice, but I wouldn't have anyone to eat it as the rest of the family can't stand coconut.

That's a real shame. Because it's one of my favourite puddings. I don't make it very often though, otherwise I'd be the size of a house. Coming to that, I only ever make cakes and puddings when I have people coming round or it's someone's birthday (for the same health related reasons).

To be fair, he just said he didn't want the whole lot of you round here for a meet. But then you wouldn't have all FITTED for a start off. I have enough trouble fitting me, OH, Dibble and the cat in here... He knows fine well, however, that if I am determined, he'd just have to sling his hook.

Last night I made Pork chops in a creme fraiche and ginger wine sauce - it was lovely. I am going to try it again - next time with chicken :)

Yum. I think we need that recipe, Tricia. :D (Now being a total ginger wine convert, thanks to SparkOut).

Mmmm. I'll be trying that sauce, for sure. :D I probably won't be allowed to use pork chops though (fussy bu**ers in my family) but I expect pork escalopes or something would be equally nice.

Has anyone got a tried and tested recipe for cheese muffins? I have a child starting school on Wednesday who doesn't eat sandwiches and I'm racking my brains for ideas for other things to send her with.
